Where Have I been???

                                                            Where have I been? 

Well a lot has happened between my last post and the one today. Between life happenings and relationship happenings its been crazy. But I am back now and will be adding more recipes in a day or two. More recipes with photos and other day to day stuff. 

I hope you will come back and stay awhile. I am here to stay. A lot of new things happening in the net year that I am so excited about!

Creamy Tortellini Crock Pot Soup

Oh it is that time of the year again where everything is getting colder out and its not quite winter yet. Here is a wonderful creamy soup that I know you will love. As with any recipe, you can add what ever you like. Maybe some cooked hot Italian sausage or even chicken would go good added to this soup. Hope you like it!                                                         




                                                                Tortellini Crock Pot Soup




1 Bag of frozen Tortellini
1 bag of fresh spinach
2 cans of Italian Style diced tomatoes undrained
4 cups of chicken stock
1 8oz block of cream cheese

Put all ingredients in the crock pot and cook on low 5-6 hours

Serve with garlic bread or a nice plain crusty loaf and a salad.

Where Have I Been?

The question that has a ton of answers. Been busy, been hectic, been distracted, and forgetful. Trying to find a happy medium with life this past year and of course it's toward the end the year I finally get my s#@t together.

Happy with my work? Not really. Could be better. Busier. But I am not going to complain. Have been able to pay my bills and squeak by. It's all been a learning curve. But I can breath now.
Personal life? Well, that's personal lol but needless to say I have just started a relationship that has so far made me really happy and really scared at the same time. Really gives you a different outlook on life.

My blog is going to go through a few different changes which I hope my followers don't mind. Still will have recipes  but thinking on more helpful hints and tips to get through life. Something inspiring now a days. Next year changing it to a .com. Yay for me!!! I've always loved writing so I am going to hope this inspires me more. Still going to be selling on eBay and other platforms but thinking of doing more passive income with my PODs. because I have a feeling I might be busier next year out and about than working at home. We will see. Things look good so far!

Ok now off to find some recipes to try and inspiration.

Supreme Pizza Grilled Cheese

It's starting to finally get cold here in New York. In fact we received a light dusting a few days ago. It was our first snow for the winter here. And now there is a storm heading our way that will be dumping a foot or more of snow. Time to stay in and make a favorite comfort food....grilled cheese. But not just any grilled cheese. This recipe I dedicate to all you pizza lovers out there.



This recipe makes 2 sandwiches.

-4 slices of bread of your choice.
-2 slices of mozzarella cheese
-2 slices of provolone cheese
-2 tablespoons of your favorite pizza sauce
-8 to 10 slices of pepperoni ( 8 if using large slices and 10 if using smaller slices. )
-4 slices of this cut deli ham
-minced onions, sliced olives, grated parmesan cheese, fresh basil, sliced mushrooms.

You can use whatever you want for your sandwich. Think of it like pizza. Use your favorite toppings.

Assembling one sandwich:

Spread some softened butter on one side of one slice of bread. Take the other bread and place on the bottom of your work place. Add 1 of cheese, then sauce and continue with your other toppings until you end up with with the last slice of cheese. ( making that 2 slices of cheese per sandwich )
Place the buttered side up to top it off then place in a heated skillet buttered side down. Now spread butter on the top slice of bread. Cook till golden brown then flip and do the same on the other side.
Serve with tomato basil soup and you are all set to stay in and keep warm.

Christmas Memories


Christmas was wonderful this year. We had family visit from out of state and there was alot of people at our home. Only a few things that went wrong. Our tree stand from a few years back broke so we tried to use one that we had for another tree and when I tried to put the lights on the poor tree kept falling over. Thank goodness my brother who was visiting was able to fix it. We went out and got a different tree stand and he fixed it so it stood up straight. This year we found our older ornaments. These were ones that were handmade from us kids or other family members and friends. 


Sammy enjoyed himself with all the company. He had his Christmas collar on and enjoyed some turkey. I hope everyone had a wonderful Christmas.

What I Am Thankful For


Thanksgiving isn't just about cooking and eating. Nor is it about watching the parade or football. It's about being thankful for what we have. Our family. Our health. Our faith.

I had a wonderful Thanksgiving with my family. We were blessed with wonderful food and good conversation. The house smelled so good while the turkey was cooking. 

My brother and I took a quick trip to the cemetery to visit our dad. Giving thanks to the people who meant a lot to us is important too. It was a nice day weather wise to do so.

I started going to church last week. My first time in about 2 years. And what a great feeling to come home and realize how truly blessed you are. 

I hope everyone had a wonderful and Blessed Thanksgiving.
