Freezing Potatoes

It seems I have come to the conclusion I am obsessive about wasting food. Two foods drive me absolutely crazy and that is bread and potatoes. ( we won't even go in it about milk ) Down here in Florida I have to keep my bread in the frig or it goes bad with in a few days. Potatoes are the same although I dont store them in the frig. I did try freezing potatoes by blanching them but after they are frozen they seem to break down and become very mushy. No one likes a mushy french fry. So I am trying a different way of cutting the potatoes into wedges for steak fries and setting my oven at 425. I then toss the wedges in canola oil and sprinkle with garlic powder, salt and black pepper then bake for 15 mins till they just start to turn brown. Let them cool and pop them in freezer bags. I will be using these within the next few days to see how they have come out. I am hoping this works then I can do hashbrowns and other cuts of potatoes. Out of the 10 lbs we bought so far I had to throw out 5 of the potatoes.UGH! I would like to say a great big thank you to some family and friends that have allowed us to have been able to keep our heads above the water so to speak. They know who they are and we are so blessed to have them in our lives. We have even been going once a month to our local church to get bread. Finding a job has been very hard. Cutting costs in just about everything. Made my own laundry soap. ( which I will post the recipe for real soon ) My very own cleaners with Borax. I will do a post on those too. I also made some "Magic Mix" which I will explain in a few days. Also a bisquick recipe from scratch. Can't wait to share these with you!
