Hashbrown Potato Salad

I know it's still not summer. But getting closer. I love potato salad but sometimes just the cutting up and boiling the potatoes gets too much. Especially if you have other things cooking. With that said here is an easy potato salad using frozen hashbrowns and you cook them in the microwave!



Hashbrown Potato Salad

1 bag ( 28 ounces ) frozen hashbrowns
3-4 hard boiled eggs chopped
1/2 cup of mayo
1/4 cup of yellow mustard
2 T of sweet relish
salt and pepper to taste and paprika for garnish
Directions

Place potatoes in a bowl with 2 T of water. Place a paper towel over the bowl and microwave 8 mins on high then stir and then cook 10-12 mins more on high. Drain any water and then cool in your frig. Combine the rest of the ingredients and mix gently with the potatoes. Chill for an hour or 2 then serve. I get the hashbrowns that are cube shaped with onions and green peppers already in them. This is easy and plus one less burner to use.
