Potato Pizza Casserole

I never would have thought that potatoes and pizza would be so good. Just didn't seem like a good combination. But boy was I wrong!

Ingredients:
  • ½ pound of ground meat – Turkey, beef, or chicken, cooked to personal taste
  • 4 russet potatoes, thinly sliced
  • ¼ teaspoon of dried basil
  • ¼ teaspoon of dried thyme
  • ¼ teaspoon of dried oregano
  • ¼ teaspoon of dried rosemary
  • Pinch of salt
  • 1 can of low sodium cheddar cheese soup
  • 1 8 ounce can of tomato sauce
  • About 2 cups of mozzarella cheese

Directions:
Preheat your oven 450 degrees Fahrenheit.  Fan your potatoes on a 9 x 15 casserole dish. Cook your ground meat according to personal taste then cool slightly. Combine the cheddar cheese soup, tomato sauce, spices and pinch of salt in a microwave safe bowl. Microwave on high for about 65 seconds. Whisk the mixture smooth and set aside. Once your meat has cooled slightly, sprinkle on top of potatoes. Pour the cheddar cheese soup mixture on top of the cooked ground meat. Cover with aluminum foil and bake for 40 minutes. Remove casserole from the oven, sprinkle mozzarella cheese on top and bake for about 10 minutes, or until cheese has melted.
