Easy Hush Puppies





I really like hush puppies. Especially served with some good fried fish. These come out crispy on the outside and moist on the inside. Make sure your oil is hot enough. What I do is stick a wooden spoon handle in the oil. If it bubbles like crazy then it's ready. If your oil is not hot enough these will soak up the oil and be very greasy. That goes with anything you fry.

What you need:
Vegetable oil
2 packages of corn muffin mix
3 eggs, beaten
1/4 cup of minced onion
In a bowl, mix together muffin mix, eggs and onions. Using a tablepoon,  drop spoonfulls of the batter into the oil.Cook a few at a time to allow even cooking. Turn once. Drain on paper towel.
